I’m addicted to that sweet and spicy chipotle glaze! I skipped the skewers and served sliced, glazed delicata squash over a bed of cilantro-lime rice and refried black beans. http://cookieandkate.com/2012/chipotle-glazed-squash/
This was incredibly delicious. That glaze is a total keeper!!! I also skipped the skewers and applied the glaze to a medly of root vegetables (parsnips, carrots, and butternut squash).

Love that this recipe is sweet and spicy! I skipped the skewers but stuck with the flavors! I also used sweet potatoes!

I also left out the skewers and added sweet potato. Lime on top really raised this up a level! And what about the leftovers? Well, what there were of them, we combined with some ground turkey and chipotle salsa and made some fabulous tacos! A great versatile recipe.

We had some small changes with the squash, and had made a dipping sauce rather than a glaze. A great appetizer!
