I couldn’t find roasted red peppers (I live out in the middle of no-where) and hate buying peppers out of season so I opted for a Sun dried tomato and walnut pesto (which I then used on a breakfast pizza!)

I made the white bean dip variation and absolutely loved it! I put it on a sandwich with roasted eggplant and baby spinach. SO good.

I changed quite a lot and made a roasted carrot and sesame pesto. I have eaten it over udon noodles, it was really good.

I made the pesto using the jarred red peppers from my pantry, and mixed it with whole wheat spaghetti topped with chopped walnuts and parmesan. Delicious!

I love this recipe! I wanted to use what was in my pantry so I went with almonds instead of walnuts then gave it a Mediterranean twist by adding olives and smoked paprika. Delicious over pasta

Great choice Heather! I made this pesto with the 8 peppers that Mark Bittman suggested and it was a lot. That was a very good thing because I got to play with it and used it in a variety of ways. However, I liked it best with some homemade pasta.

I made the recipe with my homemade peppers, leaving out the basil, and boy was it delicious!!!
And the recipe looked like too much, so I also cut the recipe to 1/3.

The difficult part of this recipe is deciding what to do with it! DELICIOUS! I didn’t have any fresh basil so I added some sweet peas to my ‘pesto’ and paired it with some baked white fish!

What a delicious recipe! Unfortunately my local had no red peppers, but I did have an abundance of kale – I thought this would make a good substitute with a few little changes (I thought I’d better change the walnuts for cashews to add a little sweetness as the kale is already quite bitter). Can’t wait to try everyone’s takes! Thanks.

So excited for this recipe when I finally get a chance to do some home cooking. I’ve had a bag of walnuts for quite sometime and this will be the perfect recipe to try it out with. As we probably all have a weakness for pasta, this should be a bit more of an update on our usua sauce recipes! Will definitely be posting pictures of it shortly. It’s great to see so much support in this community and definitely look forward to participating more.
