Thank you Joanne for picking a very delicious recipe! My boyfriend and I loved it so much! I used butternut squash and sweet potatoes instead of regular potatoes and cauliflower. Great spices, earthy flavors, and different kinds of delicious sweetness from the vegetables.

One of my new favorite soup recipes, for sure! Made a garlic broth in lieu of veg stock, and opted for basil instead of cilantro. Fresh and warming flavor at the same time, love it!

I so wanted to make the original recipe, but Italy did not supply me with some very key ingredients! So I did Marinara Poached Eggs with Mozzarella and Basil– not a shabby compromise

This soup is so good! Sarah made this with a mix of vegetables instead of just cauliflower, and subbed in sweet potatoes for a little extra super food. Yum!

I decided to puree the soup because the chunks of cauliflower seemed too big floating around in it. I really liked it pureed! And I served it at room temp with everyone’s choice of roasted shaved fennel or hard boiled eggs. I could picture using this as a sauce for a curry or as a dip with some crusty bread also (will have that today for lunch!). Great recipe, Joanne!

I made mine more of a regular curry instead of a soup. I added some additional Indian spices, different vegetables, tofu, and served it with Cardamom-spiced yogurt.
(and almost burnt the house down trying to “toast” some naan to go with it).

I left off the eggs, wasn’t feeling it. But I loved the mix of carrots, cauliflower and potatoes. A very light dish, perfect for a warmer day, but very quick to make.

This recipe really pushed my boundaries, never have been a fan of curry before, but this excellent!!! I omitted the broth to make it creamier, used two types of potatoes and forgo’d the cauliflower simply because I forgot about it

A wonderful version of tomato soup. This was a great recipe to use the last of my home-canned tomatoes from last summer. Mmmmm. I also added sweet potatoes and kale, instead of regular potatoes and cauliflower, and pureed it for added creaminess.

What a great combination! We swapped the potatoes and cauliflower for a bed of basmati rice with perfectly complimented the hot Indian spices. We served it with poached eggs to make a perfect dinner.
