I loved this week’s recipe! Thanks Evi and Sam. I roasted a whole chicken and served the vegetables au vin on the side. But the real winner was the leftovers! I did a springtime version, with leeks, peas, asparagus, baby carrots, new potatoes, and big squeeze of lemon. Crusty bread and a green salad are a must, as well as extra wine!

I did go somewhat on a round about with this recipe. I made chicken with a variation of ratatouille since many of the ingredients are the same. Imagine baba ganoosh mixed in with cooked peppers and onions. It was delicious!

I made baked turkey meatballs and herbed risotto with vegetables. It is nice and spicy.
I wanted to boost the flavor of the fruity Pinot Noir in the sauce so I roasted some red grapes and added them to the sauce.

I used a whole farm raised chicken (cut into 4 pieces) with onions, carrots, celery, mushroom, green beans, and spring peas. I should have left the skin on the bird because the meat turned out purple. Doh!

I am a little late to the party this week! I made my dish into a vegetarian version with king oyster mushrooms, shitake mushrooms, eggplant, red pearl onions, and green beans. I whipped up some polenta cakes (pages 81-82 of The Food Matters Cookbook) and served the stew over the polenta. It was very rich and versatile–I could see serving it on mashed potatoes, pasta, grains…anything.
