I had already made this dish in its original form once before, so this time I brightened it up with a heavy dose of lemon and red pepper flakes, replacing the sausage with shrimp. I also used cauliflower and spinach because that’s what I had on hand. So tasty!

We adapted this to a mini-cocotte dish, pared it down to its essentials, and replaced the meat with tofu. A resounding vegetarian success!

Unfortunately I have been out of town and was unable to complete this weeks recipe. Returning from vacation with nothing in the cabinets resulted in a healthy tuna salad instead of cassoulet. Everyone’s version of the recipe looks delicious. Way to go!

We made ours a vegetarian dish, and more of a casserole. We topped it with some Parmesan and bread crumbs, to have a crunch top! Yum!!!
I stayed somewhat close to the recipe and went with a 3 Bean and Chicken Sausage Cassoulet – slow cooked.
I used a lot more beans than sausage and a ton of veggies and it was delicious!

I made a vegetarian version also but kept most of the same ingredients as in Bittman’s recipe. I topped it with garlic bread crumbs and parmesan cheese. A delicious white bean-vegetable stew–thanks for the pick, Keely! This recipe also finally got me to bit the bullet and cook beans instead of being lazy and using canned. Really, I don’t know why I don’t cook my beans all the time other than that I often figure out what I want to eat right when I am so hungry that I need to make it then and there! Overall, turned out to be a recipe I would definitely make again.

I kept close to the original recipe but changed up the zucchini to acorn squash and added smoked, dried bacon alongside the sausages for some extra flavour!

Whew! We were out of town all weekend & a little late posting.
