Thanks for opening my eyes to how easy it can be to create a salsa once you know the proportions of fruit, herb, and acid. I made a salsa to serve with halibut tacos using only green ingredients. Hope you like it as much as we did.

We made (in honor of Cinco de Mayo) a healthy taco salad with salsa fresca–an instant classic!

Great pick Alissa – I can’t wait until my sons nap later to come back and check out everyone’s recipes!
All of these recipes look so good. I am still waiting for Bittman’s book to arrive so that I can join the party properly. I should have it by next week and will add my take to the mix. In the meantime I’ve been loving the various of interpretations you all come up with.
I went for super refreshing… and a great way to use up extra watermelon during the summer months ahead! http://vanillalemon.com/2012/05/07/watermelon-salsa/

I made an asian inspired salsa with avocado, roasted corn, jalapenos, sesame seeds and cilantro. The perfect topping for grilled fish or a twist on the traditional.

Hi everyone,
I made regular tomato salsa with a couple of modifications from Mark’s recipe.

I’m so glad everyone enjoyed the salsa recipe. It is so versatile. I can’t wait to try some of the other variations that everyone has come up with. I am totally infatuated with the rhubarb salsa that I made.

Pingback: Baked Tostadas with Tomatillo Black Bean Salsa - Cookie and Kate
I made the tomatillo and black bean salsa (loved it!) and enjoyed it on baked tostadas with feta cheese. http://cookieandkate.com/2012/baked-tostadas-with-tomatillo-black-bean-salsa/
I made 5 salsas using Bittman’s recipes as a jumping-off point. Made the pico de gallo to the letter, made a cooked peach-mango chutney instead of peach salsa, a green apple-cucumber-avocado salsa, a cooked tomatillo and black bean salsa, and a corn and black bean salsa. My favorite was the tomatillo and black bean salsa, which brought me back to the days of working at a vegetarian restaurant that has the best tomatillo salsa.
