Okay, so here’s my take, with distinct liberties obviously taken and an explanation for them. If you look towards the second half of my post it explains my approach, so I’ll save going into it here. I made a mexican-style fruit salad, no fish.
After googling “mexican fruit salad”, I found tons of bionico recipes. None of these bionicos looked any good due to poor photography skills, but I loved the idea of a creamy fruit salad with some crunchy toppings. It inspired me to make a healthy bionique breakfast bowl.

I made a spicy pineapple-strawberry-basil salsa and served it over spinach with grilled shrimp, feta, and a citrus vinaigrette. Perfect for bikini-season eating!

I wrapped some halibut in banana leaves and grilled it. After grilling I topped it with a orange-pineapple salsa.

It’s prawn season here in the Pacific Northwest, so I chose to use shellfish. I added a bit of a kick to the salad with a tequila lime dressing. I loved how easy it was to adapt this recipe. I think I’ll try it again in the summer and see if I can use only locally grown fruit. Thanks for showing us this recipe Sarah!

Wow…love the ideas and dishes that everyone came up with. Inspiring! I made a Mango and Coconut Quinoa Salad. Holy bananas, people. So good. We ate this as a side to grilled salmon. Perfect pre-race meal for a 30 mile bike ride!

For various reasons I was unable to use fish. I made a lentil salad with Mexican spices and fruits including jicama, avocado, strawberry and papaya.

We didn’t have fruit or fish, so I improvised with a Mexican twist (still a salsa, right?).

I took this opportunity to make my favorite fruit salad–a fruit salad with a lime-basil dressing. I have made it before but this time I used agave nectar instead of sugar and it turned out great.
