We made our own blue corn tortillas and used them to make spinach and bean quesadillas – a perfect dinner in our opinion!

I loved this week’s recipe, thanks to Jacqui! I added a few more veggies to mine and used chipotle chili and some cumin… Had some delicious fresh salsa along with it to make an even better burrito.

I hadn’t had kale in over a year. {Let’s just say I went on an over compulsive kick and it got “kicked” out of the house for a while.}

Whoops, is it Wed already!? This is my first post here, but already in love with the cookbook and have so enjoyed seeing everyone’s takes. We did pintos, chard and then mixed those leftovers with scrambled eggs the next day, yum! Looking forward to next week!
