Hi all! It’s my first time posting here and I’m excited to see what everyone makes! I used up the last of my frozen heirloom tomatoes from last season in a Roasted Garlic Tomato Soup. http://www.thegoodnesslife.com/blog/vegan/heirloom-tomato-soup-with-roasted-garlic
I tried adapting the recipe by using asparagus instead of tomatoes, that did not go too well. I have a few suggestions on how to improve my idea, though.

Tomatoes aren’t quite in season for us so we layered the tomatoes we had with pasta and cheese to make a creamy and refreshing baked macaroni and cheese!

I’m on a chia seeds kick right now, so I added these to the topping and used cherry tomatoes instead. Flipping though Bittman’s book, this is NOT a recipe I would have chosen to make without this FMP challenge, so thank you, Nicole, for choosing it. We loved it.

Didn’t quite make the recipe Mr. Bittman wrote. Attempt one ended as a baked panzanella and on the second attempt, I couldn’t even bring myself to put the tomatoes in the oven

I did a tomato tart since I was only able to find small tomatoes at the farmer’s market. But I’ll definitely have to try Mark Bittman’s recipe when tomatoes are in season!

For some reason my comments aren’t going through! I waited till Tuesday for the farmers market to re-open and make this. I loved it! I used walnuts and two types of cheese with lots of fresh basil. Great recipe!
