This was my first time to make chimichurri. I made a cilantro-mint chimichurri and added it to GRILLED CABBAGE! L.O.V.E!

Absolutely loved this one…perfect for these hot days!! I made mine with garlic scapes, a little mint and parsley. Delicious on grilled dinner…and on eggs…and bread…and salad. Mmmm.

Thanks for a great pick, Lexi! I made a vegetarian feast with grilled eggplant, squashes, orange bell pepper, scallions, and portabello mushrooms. Served with some angel hair pasta and the delicious chimichurri sauce of course!
