Hey Meg! Thank you for choosing such a great recipe… it was crazy hot over here but turning the oven on for these beets was soooooooooooo worth it! This recipe is definitely one of my Mark Bittman favorites now and I can’t wait to take these to a party! I stuck pretty close to the original recipe because it was too good to stray from!

I am in deep smit with beets! However, I too did not want to turn on the oven due to the 107 degree temps! I deconstructed this recipe, making a vegan ranch dip for veggies! I bet it would go great with beet chips!

I made beet and sweet potato medallions with pistachio-goat cheese filling (no arugula). These were so good! I had NO IDEA I could like goat cheese more than I already did but this took it to the next level. Meg, great pick!!! I will make this over and over, I’m sure.

Hi foodies! – I took a summer hiatus/blogging break and are now so excited to be back!
I am a non-beet person, so I made sweet potato chips – with a vegetable peeler! So easy! And of course I added some salty cheese

My beet chips were a bit too thin so they shrunk a lot… too much to make a sandwich out of them. Sometimes a mistake turns out delicious, though! I sprinkled them over heirloom tomatoes and Fifth Floor Kitchen’s walnut pâté as a replacement for the goat cheese (which was amazing), since I can’t do dairy. Thanks for picking a beet recipe, Meg — I was reminded how much I love them. And it looks like other people had more luck with the chips, so I’m going to try them again with the leftover beets later this week.

Vegetarian is the way to go! I will have a burger occasionally, like, once or twice a summer, but overall it’s a lot healthier and more morally sound.
