Good morning! Back in the day I made many roasted veggie platters served with romesco for date nights. It has been a long time since I made this so was thrilled to return to one of my favorite meals (albeit with good girlfriends this time) so thank you so much for the pick this week, Mireya! My take on it includes a platter of roasted farmer’s market vegetables. I also served it with some chimichurri because now I am hooked on that too!

Looks like it was a great week for improvising! We added some orange zest to the chicken for a sweet and spicy orange chicken with the roasted potatoes and romesco sauce. The sauce will definitely be entering regular rotation.

I had never made romesco sauce before! Double Yum! We fired up the grill and put it on zucchini and buffalo burgs. To make it gluten free, I left out the bread and rounded out the flavor with hazelnuts.

We didn’t really do anything to change the sauce, it sounded great as written. We did serve our potatoes & chicken with grilled green onions & blistered Padron peppers we picked up at the farmers’ market.

Sorry for the late addition… we’ve been busy moving this weekend (bigger kitchen!). We roasted potatoes and paired them with a spicy ancho chili vinaigrette – what a great side dish!
