I joined after the chimichurri week and I feel like all I’ve been seeing is people talking about how delicious that sauce was, so I went ahead and made that. And everyone was right — it was amazing!

I made a Chicken Tamale Casserole based on his “Skillet Tamales” recipe. I have been wanting to make this since I got the book. It’s awesome!

I decided to pick out something we haven’t made yet… I went for Mark Bittman’s Cucumber Cups with Melon Gazpacho but instead of carving out cups, I added the cucumbers in the gazpacho and made Cucumber-Cantaloupe Gazpacho.

My lemons and basil are growing like crazy this summer so I turned them into a sorbet and served it in hollowed out lemon cups.

We did a new recipe as well and turned Bittman’s Beans ‘n Greens Burrito into a black bean, spinach and sweet potato quesadillas. A colorful and nutritious meal!

Alissa, it was sooo good! I’ve decided garam masala and cauliflower are a match made in heaven. Even my squeamish and skeptical husband wolfed it down and was singing its praises. Definitely try.
I too made another variation of the Beans n Greens burritos, except I used Swiss Chard as the tortilla for a grain free alternative! Mmmmm…
