What a great summer recipe! Thanks for picking it, Alyssa! We made an entire Asian-inspired feast tonight.

A great summertime meal for a hot day. Cool crispy veggies and a spicy sauce. I was glad that Alyssa had chosen a recipe that didn’t require cooking, but then I ended up canning the sauce I made! http://joinmefordinner.wordpress.com/2012/08/12/summer-rolls-with-thai-chili-sauce/
I changed the stuffing for my summer rolls to some sweet chili sauce-roasted zucchini and eggplant…this was definitely a great summer choice! http://www.joanne-eatswellwithothers.com/2012/08/recipe-summer-rolls-with-peanut-sauce.html
Thanks for such a refreshing dish Alyssa! We rolled ours with carrots, zucchini, cucumbers and herbs. What a fun starter or side dish!

I made my summer rolls with shrimp and mango. Loved the mango in them.

Great choice Alyssa!
I made gluten free (veggie-filled) potstickers instead: http://www.minceandtype.com/2012/8/13/gluten-free-potstickers#
We stuck close to the original recipe but used a different favorite peanut sauce which took these spring rolls from good to great!

I finally got the chance to make egg rolls! I went baked instead of fried, and loved them! The perfect hangover food to indulge in after my engagement party festivities.

The two of us aren’t too crazy about summer rolls, so we took similar ingredients, deconstructed it & used the sauce to dress our rice noodle salad.

Life is way to busy right now to make summer rolls, so I deconstructed the ingredients, added a few and made a Thai Peanut Cole Slaw!

A little late because I’ve been recovering from Sarah’s fabulous engagement party. Alyssa you are amazing for choosing these; I am so glad I know how to make them now!
I stuck fairly true to the recipe, adding avocado and vermicelli rice noodles. I also made a sweet and spicy dipping sauce that was a perfect complement to the rich peanut sauce. Double dipping allowed!

Trying to get more of my veggies in, so I filled my first spring roll attempt with just a few veggies for a light afternoon snack. So glad I know how to make these now! http://foodandfrederick.com/2012/08/13/the-food-matters-project-spring-rolls-for-one/
