A little different than nachos, but a greek panzanella salad- perfect for a healthy dinner!
This week was really fun. We went for a vegan option this week with a Taco Salad and some cashew “sour cream”. Thanks for a great choice Megan!

My range is broken so this was a great choice for me this week.. I was also able to use up several veggies I had on hand before heading out of town yet again today! Thanks for the great choice, Megan! I loved the versatility and the feta drizzle was good both on this salad and later, as a dip for some crusty bread.

I stayed close to the original recipe but used Trader Joe’s Pita Chips (so I didn’t have to turn on the oven) and really tweaked the dressing to make it lighter and more minty!

We loved having another no-cook recipe this week! We turned this into a Greek salad with bulgur and added all of summer’s great vegetables. Topped with Bitman’s yogurt and feta dressing it was delicious!

I used the small potatoes from the Farmers Market and adjusted the feta drizzle with some extra spices. I also sprinkled some oregano flowers over the dish.
Although my little baby almost prevented me from creating the dish. That’s why it took me all day….
