I worked with what I had, and my ‘cake’ turned out more like a tart… I’m going to have to try this one again when I have all the ingredients I need on hand, because I really enjoy cornmeal-based recipes!

This was a really great recipe! We used fresh apples instead of apricots which was a delicious addition. Next time we are thinking of making it an apple and caramel upside-down cake.

Because my husband has a grain sensitivity, I used almond flour instead of cornmeal and flour. And I also used zucchini and apples instead of apricots. Great for breakfast!

i used fresh peaches and it turned out really nice. we’re going gluten free this month but since i was sharing with coworkers, i kept pretty close to the original recipe.
