Since I’m on a trip I didn’t have much time to play with this recipe. I whipped up a quick batch of the Bread-Nut Mayo before I left and used it in an Egg Salad Sandwich. The mayo was really good and I can’t wait to try the tofu version when I return home. Thanks Sophie for a great pick!

I mixed this with egg salad (making it decidedly not vegan) but it added a great dimension that I liked better than store-bought regular mayo!

I am not a big fan of mayo but was thinking about some fries and siracha mayo so made a vegan version of siracha and roasted garlic mayo with sweet potato fries and roasted fingerlings I picked last week. Yum! Thanks, Sophie! Now I have a guilt-free sauce for spuds and other things

We turned ours into a dill mayo and have been using it all week to dip sweet potatoes in, spread on sandwiches and top burgers with (FYI: this mayo goes great with next weeks spinach-tofu burger recipe).
