We loved Bittman’s recipe for carrot gnocchi with the sage and brown butter sauce. Great choice for a cold winter meal!

I kind of still can’t believe I actually made gnocchi. I omitted the nutmeg and sage and made a basil sauce instead and added some kale to the pan (because I can’t help adding kale to absolutely everything). Thanks for hosting, Joanne!

I hope everyone liked the gnocchi this week!! I paired them with roasted butternut squash, peas and a ricotta sauce – http://www.joanne-eatswellwithothers.com/2012/11/recipe-whole-wheat-carrot-gnocchi-with.html
Great pick Joanne! I made mine with butternut squash and a brown butter and thyme sauce. YUM! http://www.pidgespantry.com/whole-wheat-butternut-squash-gnocchi-food-matters-project/
Oh wow, I am loving these gnocchi’s so far! My post is going to be late tonight, but I’m really enjoying seeing what you guys have whipped up. Oh, and don’t forget to show our Facebook page some love and post your link there also
Pingback: Carrot Parsnip Gnocchi with Sage Brown Butter
I really loved making this dish! Such simple ingredients yet such an impressive outcome. I added parsnips for a little extra sweetness.

Great pick Joanne! Everyone’s gnocchi’s look great. I wasn’t able to cook this week but I’m looking forward to trying this recipe soon.
joanne, this was such a great pick… i failed to make gnocchi because i added too much flour. it made for a really good whole wheat butternut squash-carrot pasta though!!! i simply tossed the pasta with some sauteed garlic, onion, mushrooms, and kale… voila… earthy, healthy, and very savory!

Pingback: Purple Carrot and Parsnip Gnocchi - Gluten Free | The Goodness Life
Phew, finally got this thing finished.
These were fantastic. I still can’t believe I made gnocchi (and gluten free, too)! I topped mine with a vegan alfredo sauce made with cashews. What a fun pick this week – thanks Joanne!

My computer died and I lost my PhotoShop as a result (I know, sad). So here is my take on a very orange carrot gnocchi, which was delicious non the less.
