I made mine close to the original version with butternut, apple, onion, and garlic but added roasted celeriac and flavored it with Indian spices. It has been a delicious detox soup to enjoy post-Thanksgiving! Will post after work tonight!
Alright, finally posted! Here is my take on this wonderful roasted butternut soup. I served it with a brilliantly colored salad for a great detox meal. Great pick, Jen!

This one inspired me to try a homemade ravioli stuffed with squash, but I used acorn instead of butternut. I love my butternut squash soup, but this was a fun change of pace!

I made a curried squash and lentil soup, but just couldn’t find time to post today. I’m loving what you all came up with though, and I’ll post mine tomorrow
we did not do soup, instead, we used the butternut squash to make waffles sunday morn.

I LOVED this recipe! And also loved reading everyone else’s takes. I made it close to the orginal but with turkey bacon. Unfortunately I made this after it was too dark out to photograph it, and then the next day it was consumed too fast before I could take a picture of it. D’oh! If only food blogging pics were easier!
