Yes, there were tons of herbs to chop for this one but I thought they were so good that I ate them whole, without mashing, just warm from the pan.

Great choice Lexi! This recipe immediately made me think of hummus so that is what I made! White Bean and Rosemary Hummus http://www.pidgespantry.com/white-bean-rosemary-hummus-food-matters-project/
This was a really versatile dish. It was dinner, lunch and snack – and got better each time I ate it.

I didn’ t have nice herbs to work with so instead I made a White Bean Dip with cooconut milk and Meyer lemons.

Great recipe, Lexi! I added some celery root, lemon juice, and garlic to mine for some oomph (and because I was looking for a good use for my last celery root!). This was really satisfying without being unhealthy!

This was a great pick! I love to experiment with different types of hummus. I put buffalo sauce and shredded chicken in mine for a lighter spin on those cheesy buffalo chicken dips.

Yum yum! I didn’t have any fresh herbs, so I used red chard and it made my bean dip pink! Great pick this week Lexi
